Kale is a dark green, leafy vegetable that is part of the cabbage family. Kale has been gaining popularity in the United States among health enthusiasts because of its high fiber, vitamin and mineral content. High in Calcium, Iron, Beta – Carotene and Vitamin C, Kale is also a good source of dietary fiber. Kale can be eaten raw or cooked, raw kale is often used in salads and has a slightly bitter flavour, which can be a nice contrast to sweet or nutty flavours like honey or tahini. Kale can also be steamed. sauteed, boiled, baked or stir fried. Try this fresh green as a simple side dish sauteed with garlic, salt and pepper. Add it to soups and stews to add a great deal of nutrition and just the right pop of colour and texture.
